Chocolate mousse

Good as a dessert for many guests as it can be made the day before.

Ingredients

Eggs
20 g
Icing sugar
100 g
70% Cocoa chocolate
50 g
Butter

12 h (overnight)

Instructions

  1. Separate the egg whites from the yolks.
  2. Melt the chocolate together with the butter in a bain-marie.
  3. Meanwhile, beat the egg whites until stiff.
  4. In a bowl, beat the egg yolks with the icing sugar until light and fluffy.
  5. Mix the melted chocolate into the egg yolks, stirring continuously.
  6. Add a third of the egg white mixture and beat to a basic mixture.
  7. Fold in the remaining egg white. Pour the mixture into a piping bag.
  8. Pour the mixture into ceramic moulds or, optionally, glasses and leave to set in the fridge for at least 8 hours. It is best to place cling film over the moulds to prevent a skin from forming.
  9. Optional: grate some chocolate over the finished mousse.
