Chocolate mousse
Good as a dessert for many guests as it can be made the day before.

Ingredients

70% Cocoa chocolate

- Separate the egg whites from the yolks.
- Melt the chocolate together with the butter in a bain-marie.
- Meanwhile, beat the egg whites until stiff.
- In a bowl, beat the egg yolks with the icing sugar until light and fluffy.
- Mix the melted chocolate into the egg yolks, stirring continuously.
- Add a third of the egg white mixture and beat to a basic mixture.
- Fold in the remaining egg white. Pour the mixture into a piping bag.
- Pour the mixture into ceramic moulds or, optionally, glasses and leave to set in the fridge for at least 8 hours. It is best to place cling film over the moulds to prevent a skin from forming.
- Optional: grate some chocolate over the finished mousse.
